Hand-harvested, selecting only the best bunches. Fermentation in bin with gentle punchdowns, and pressed in a basket press. Aged in 3 used French oak barrels (one of them second use) for 8 months. Unfined and unfiltered.

Hand-harvested, selecting only the best bunches. Fermented and aged in stainless steel tank for 7 months. Unfined and unfiltered.
